Dear Members and Friends of Slow Food South Australia
I am forwarding this information, photos and video link to our recent event celebrating the UN’s Gastronomy Day on 18th June. The United Nations Association (SA) with several of their members supported this initiative with wonderful outcomes.
The Video will be used as an Educational Tool by Ben Sharp of the Career Employment Group/Institute of Commercial Cookery. It is with great thanks to our wonderful Chefs, Cheong Liew, Rosa Matto and lead Salvatore Pepe who worked so well together in this wonderful endeavour on behalf of Slow Food South Australia. Thank you Ben for allowing us to use your facilities.
We were delighted that the newly appointed Italian Consul, Adriano Stendardo, joined us to add context to our story. John Burke provided the Video and Tania Paola, John Burke and Oliver Ali (UNAASA Photography Cadet) provided the photos.
From the vivid descriptions provided by Salvatore you may wish to try this recipe yourself – but remember this is definitely a winter activity. Scroll down to view the photos of our sausage making.

PLEASE NOTE:
Extraordinary precautions were taken to keep safe as it was not always possible to socially distance during filming. Advice was sought from a Slow Food Member who is a medical practitioner working in a designated COVID 19 hospital, to enable us to work safely.
