Slow Food South Australia is launching the Snail of Approval Program.

This international recognition program aims to inspire farmers, growers, producers, chefs, restaurant/café owners, food artisans and food outlets to use and promote the Slow Food principles of Good, Clean and Fair food from our regions.

Snail of Approval applicants must demonstrate their business is achieving or working towards the Slow Food Manifesto, as outlined below, for quality defined by the three principles of Good, Clean, and Fair.  Applicants are also required to demonstrate connection and awareness of Slow Food values through their contribution to the plate, planet, people and culture.

“To change the world, you have to change the menu first”

  1. GOOD: Quality, flavoursome and healthy food that is part of our regions
    • Seasonal variations are reflected
    • Production continues, develops, or creates tradition and craft.
  2. CLEAN: Food production and consumption with low impact on the environment, that does not harm animal welfare or our health
    • Environmentally sustainable practices in all areas of the business are taken into serious consideration
    • Production processes aim to protect ecosystems, the environment, human and animal health and welfare.
  3. FAIR: Accessible prices for consumers and fair conditions and pay for producers and their workers
    • Production has fair labour practices and respects cultural diversity
    • The business charges fair prices for both consumer and producer and is financially sustainable.
  4. CONNECTION & AWARENESS OF SLOW FOOD VALUES: Applicants demonstrate an understanding of where our food comes from, how it was produced and by whom. This includes:
    • Commitment to local sourcing
    • Commitment to food biodiversity
    • Communicate information on provenance and sourcing to their consumers
    • Encourage taste and food education around how our daily choices impact our local economy and environment
    • Contribute to the uniqueness and richness of our local food community.
